I use Mint. I tried Ubuntu several times and ran into dependency issues. Mint has extra stuff you won't need, but it "just works". And no Snap.

I can't attest to privacy, but I have used Zoho for years with my domains.
When you boot the computer, each device identifies itself to the OS using a combination of a vendor code and a device code. In Terminal, try the following two commands:
lspci lsusb
You have to have APN setup properly with settings from your carrier. Do a web search for your carrier + iOS + APN
Orion uses WebKit and allows Firefox and Chrome extensions.
Maybe add an Android device to one of the HDMI ports?
