I just started Stargate SG-1 not too long ago. I wouldn't call it perfect, but it does hold up decently and is pretty entertaining. 10 seasons too.

MODERATORS
It's amazing how every planet in Stargate looks like the Pacific Northwest. The Ancients must have really liked evergreens.
Also pretty convenient that most of the aliens are quite human-like, and most of them seem to speak English pretty well.
Its the James T Kirk paradox. Every alien species must be fuckable.
They actually comment about this in a couple episodes.
Plus 5 seasons of Atlantis and two SGU

Oh man I haven't thought about SG-1 in years. It has more explosions per episode than it does deep plots but it's a great ride.
Still haven't watched Firefly...
It's good, but I'm not sure if it holds up if you aren't already nostalgic for it.
It has so much of that Joss Whedon wry sarcastic dialogue that has become the replacement for comedy in modern movies
Yeah I was ride or die for Firefly back in the day and it still does things that were impressive at the time, but my love for Whedon has definitely lost some of its shine. Especially his "strong" women characters that feel like barely the baseline today. It probably helped make that possible, but it doesn't seem to stand out nearly as much as it did in the 00s.

I highly recommend Mr. Robot and Dark if you haven't seen them. Although Dark has only three seasons.

It may not be 8 seasons long, but its nice and short enough to binge all in one night.
That's how I binged Supernatural two years ago, what a show!
If you like horror-drama, "From" series is good to binge watch.
The Sopranos
For me the sweet spot is 3 or 4 seasons AND knowing that the whole thing is self-conclusive.
Fringe was fantastic back in the day, not sure how it holds up today though
