Did it a bit differently this time. Velveted it with baking soda and hot sauce for 30 mins before (which has a really low pH). Worked really well. Wouldn't bother for fresh though.

Looks awesome! Love making calamari, partly because it's too expensive to buy it already cooked in any quantity π. Never heard of the hot sauce method though, will have to look into it!
Motivated by how good my chilli was last week, this week I'm doing cowboy beans (kinda like baked beans but without any baking). Got some speck, Texas smokey bratwurst (don't know, just saw it and figured it would go), few cans of 4 bean mix, can of diced tomatoes, onions, carrot, capsicum, garlic, jalapeno, bbq sauce, Frank's red hot, and brown sugar.
