Last night's panko calamari:
Did it a bit differently this time. Velveted it with baking soda and hot sauce for 30 mins before (which has a really low pH). Worked really well. Wouldn't bother for fresh though.
Tonight is a run of mill beef stirfry.
Looks awesome! Love making calamari, partly because it's too expensive to buy it already cooked in any quantity ๐. Never heard of the hot sauce method though, will have to look into it!
