PIC season 3 is good, season 1 has stuff that matters for season 3, and season 2... happened. It's so weird to me that seasons 2 and 3 were shot back-to-back but 3 totally ignored 2's loose ends.

I think you can go straight from TNG to PIC season 3. No need to watch 1 or 2.
1 has some interesting concepts, but weak characterization and pacing. Helps to know some of who Raffi is and to bring Seven into the fold.

After reading that there's torture porn in Picard I will never watch any more of it than the first maybe three or four episodes I did see many years ago.
Hmm... there's Icheb a few episodes into season 1 (still salty about that). Season 2 is a bit like torture to watch unto itself, but nothing overtly graphic that I recall... oh, there is that sequence involving the Founders in season 3. Though it's not there to glorify, but to point out mistreatment.
Rated R Trek does take some getting used to. Some of the swearing is a bit hamfisted. Not Captain Shaw, of course. Watch season 3 if only for him.
