UAE has big money and likes megaprojects, have they started digging a channel between Ras Al-Khaimah and Zaghi? Some tidy profits if they can do it.
If these kingdoms had built a pipeline skirting the strait, I guess it would still have been susceptible to missile & drone attack, and a 500-mile long, deep-underground pipeline was out of the question.
I know Saudi Arabia does have and east west pipeline that they can use to ship oil out and bypass the strait I just assume it doesnt have the capacity to match all the ships that usually take all the oil.
A canal along that approximate path would be "only" 34km. Questionable whether that, or a 500km buried pipeline, would be easier.
I always thought an Emirati Canal would probably make a whole lot of sense whenever Iran gets uppity (or vice versa, in this case).
Sure, it would still be susceptible to attack, but doing so would draw the UAE into war as well, and they'd have the ability to place land-based air defense along its route
A barrel of oil is about 160 litres, and the biggest liquid transporter trucks usually hold about 60000 litres. That's 375 barrels per truck.

not blowing things up unnecessarily costs way less than any building projects. Even if the rails were built, not a lot of things are stopping it from getting struck by missiles.

I think you're underestimating the sheer scale of the endeavor. It would need to cross several deserts, a mountain range and an international border. As drawn in the image there's almost 800km, let's say, between Abu dabi and Al Ashkara. Being very generous with the geography, a costly project like this could run for $10 MM per Km or about $8 Bn just for the construction (probably more as it would not be a straight line), plus maintenance (in this place it could be up to 30% of the construction cost a year), plus rolling stock and operation costs. Feeding and getting water to those workers would be a logistics nightmare in the middle of the desert. Another couple of billions for unloading and loading facilities that could handle millions of barrels daily, to be built from scratch.
That's before even reaching the question of timeframes. Rail can be built really fast, but fast is roughly one kilometer of rail a month. Assuming all permits, contracts and administrative load can be fast tracked (it can take years to design and approve a project of this scale), it would take 66 work years (surely distributed between several work crews) to complete a new heavy railway. Which balloons the cost by a 50% factor for each new crew to accelerate construction.
For reference, the Australian, Adelaide to Darwin rail line is 4 times longer than this. Its construction started in 1910 and was finished in 2004. So, Oman-UAE should have this rail in place and operating no sooner than 2045 if they rush very hard.
By the time the new rail is laid out, Israel would've completed their genocide of Iran.

For one thing we could build trucks much much bigger if we wanted to, we could build them as big as tankers if we wanted to, and in the middle of the desert it would not be hard to get permission.

But if that strait is no longer free the relative price goes down and the oil makes enough money to cover it a thousand times over.
Really, it's not economical or practical to do this in the slightest. Laws of physics have fuck all to do with it. Also, a giant hole in that genius plan of yours is that Iran can just bomb this infrastructure like they're doing with all the other infrastructure in the region right now.
