If you had to make freezer burritos and wanted to use lentils what recipe would you use?

I have used lentils as a replacement for ground beef in sloppy joes.

Having things in the freezer you can microwave can save you a fortune when cravings kick in.

What recipe would you use to create mini freezer buritoes with lentils instead of ground beef?

Make sure to specify which type of lentils you would use.

When I have money I want to try a few test batches.

Are you set on using lentils? When I want to emulate ground meat, I typically use beans (canned kidney beans, black beans, or both) and nuts (cashew or walnuts). Roast the nuts in a pan without oil. Rinse the beans with water and spread in a baking sheet. Roast in the oven at 200°C, opening the door a couple of times to let out the moisture, until they look "popped". Then put that in a food processor, mix with some egg, spices and whatever else you want to add (like onions). The resulting mixture can be cooked like ground meat to make veggie burgers, meatballs and such.

If you have to use lentils, then I agree with the other comments that recommend making them into a curry kind of thing and adding other veggies as the main filling.

Nuts cost $7 a pound. That's ground beef prices. Lentils cost $1.50 a pound. I already make beans freezer burritos so this would be redundant.
