The plan when I thawed the venison cube steak was chili. But I had Mexican slaw and jalapeno cream sauce to use up. So burritos got the win. Taco seasoning, bacon grease, orange juice, venison, Mexican rice, vinegar slaw, jalapeno cream sauce, avocado.

The new inox pan is a wonder to get perfect crusts. Even on the brined chicken I got it perfect. Once I got the crust done on both side I could put the whole thing in our oven to finish cooking.

Pasta dough from scratch but it took longer than expected to get the pasta in and out of the pot so the butter went from brown to dark brown. Still tasty. Sage and garlic from the yard.

Steak was free.

Simple but effective :)

Red wine and shallots sauce based on beef fond I portioned last week.

I’m trying to go for a more western arc in my cooking adventures.

There's a meat store near me. I wouldn't call it a butcher. The prices are at least as good as Walmart but with better variety.

They sell two pounds (1800 grams) of pepperoni for $3.99. About once every month or two they put it on sale for $3.

These are not perfectly uniform slices. This is like when you buy a bag of bacon ends and pieces. Sometimes there are some definitely not sliced bits in there that might be great for a snack but aren't usable for pizza. You gotta slice those chunks yourself. And at $1.50 a pound it's totally worth it.

I'll break the bag into four ounce (113g) portions and vacuum seal those up and toss all but one in the freezer.

These quarter sheet pan pizzas can comfortably fit 1.3 oz (37g) of pepperoni each.

Made this as a celebratory dinner one night for my wife. The ricotta gnocchi comes together so quickly but feels so impressive, and any time I include a ribeye she's happy haha.

So, I tried a recipe for buttermilk pie from the Internet, and it may not be the prettiest thing to ever be baked but it is delicious and super easy (and cheap) to make.

I made hot cross buns tonight.

They have cinnamon and sultanas, nothing fancy. Messed up the lines a bit, but it's just flour and water so they don't add to the taste whatsoever.

As dough balls do, they sometimes proof in to weird shapes you don't expect. 🤷🏻‍♀️ An unevenly heating oven also does not help.

My tolerance for cooking lately has been putting something in the oven and coming back some time later so I'd like some sheet pan dinner recommendations to change up fish fillets or brownies (or takeout).

I just had:

Pasta. Little bit of pepper and grated cured egg, grated truffle and grated Parmesan. Some spring onions and some random left over herbs.

Absolutely banging!

Left over truffle will be used to make truffle butter.

The eggs, scallion greens, wild garlic chives and dead nettles came from the yard.

Butter, tomatoes, olive oil, salt, pepper and emergency goat came from the store.

Cost per person, $2.80. $1.5 of that is tomatoes.

I guess the trend is to call it "chilli crisp" now, but I still call it crispy chilli oil.

I've not done hard drugs before, but if I could feel what a bad addiction is, this is it. I could spoon it straight from the jar.

Been sick the last few weeks. This isn't spicy enough to clear my nose, but it is still delicious despite my muted senses.

Can be made vegetarian using vegetable stock powder.

Free chicken thighs went into this but after cooking it I'm convinced that they were completely unnecessary because the sun dried tomatoes did all the lifting here.

This is the recipe I worked from but instead of a slow cooker I did it as a one pot. Browned the chicken. Deglazeed with some stock, added the onions and deglazeed again after they were just barely going clear.

Then the garlic, carrots, seasoning, stock, and sun dried tomatoes, chicken powder went in. Simmer all that for as much time as you've got, minimum 30 minutes.

Add the potatoes, bring to a boil, reduce to simmer. Once they are not fully fork tender I added the beans and spinach. Once the spinach is wilted its serving time.

We talked about different versions for the future.
No chicken.
No chicken but yes mushrooms.
No chicken, potatoes or beans. I like this because it would be like an Italian miso soup with spinach instead of seaweed.

Pasta instead of potatoes for a more cold soup method.

You are going to want some bread. You gotta soak up the broth. If you don't make some then store bought exists. It represents about 35¢ of the cost here because I made it in the morning.

Cost per person: $2.67.
Cost per person with the chicken: $3.65 This also took a lot of stock so add that in because I used homemade that I canned up with years ago from free turkey. Figure in buying bread and stock and realistically you are probably looking at closer to $5 a person.

Shot from the night before which shows the interior:

I pressed slices of firm tofu on towels to pull out excess moisture before marinading it in a blend of garlic, ginger, lime, fish sauce, and hoisin, and then searing. Topped with fresh mint, cilantro, parsley, cucumber, and serrano, as well as some quick pickled carrot, red onion, and radish. I also added some leftover herbed yogurt sauce for the heck of it, which turned out pretty good.

Homemade jalapeno cream sauce and quick pickled cabbage slaw. The crunch from the fried corn tortillas and slaw is very nice with the refried beans.
