I have just brewed my first batch of hooch with Lalvin EC-1118 vs the Red Star Cote des Blanc and WOW it's a really great yeast! Very little champagne flavor and it's gobbled up every scrap of sugar in my must. The output is very strong I got 17% and just tastes very clean. I'm a convert! I fermented some organic strawberry lemonade that was on sale and i'm just tickled with the results.

you put juice (or whatever with sugar) in a vessel with yeast for a week or so!

I use yeast nutrients and pectin enzymes and add invert sugar but none of that is really necessary just adds to an overall quality metric. At the end you get really cheap alcohol that doesn't give you (me) hangovers in the same way store bought cheap alcohol does.
