Because people (like this literal independent audit group) are checking and reporting back.

While I have no doubt at all that some people just take these tools and guides as gospel, a lot of the time the people supporting them are checking them. This comment section alone is filled with people suggesting Wireshark to check where data packets are being sent to for local models.
