Aside from DEs like KDE i think the only other tiling compositor that has HDR support is sway (they added it in their latest release). Unfortunately i'm not really versed with latency stuff cause i'm not competitive, but it might be worth a look to see if it can work for you.
Edit: it seems like mango does have a version with HDR support after reading the replies, i did not know that.
