Hang mothballs on the rose bush. Won't stop the snacking entirely, but will reduce it.

Deterring possums requires the old fashioned naptha ones. Which I reckon are horrible in the house but work quite well outside as pest control. They do melt in a lot of rain, but in dry weather last quite a while.
